Today I opened the fridge to find a bag of plums I had bought while grocery shopping with my mother, it hit me, that if these weren’t going to be eaten soon they would go bad. My grandmother is a natural when it comes to bakind fruits into desserts and so immediatly I called her and asked for a recipe. So here it is: super simple and incredibly delicious.

All you will need:

  • 6 eggs
  • 6 large spoonfulls of flour
  • 6 spoonfulls of cake
  • a pinch of salt
  • some butter (for the pan)
  • 5-6 plums
  • some more sugar for bottom of pan

IMG_5368Start by lining your pan with pieces of butter and a thin layer of sugar. Then start slicing your fruit and placing it in the pan. Once the tray is filled up with plums pop it into the oven at 350 degrees F or 177 degrees C. Let it bake/soften while you make the batter.

The batter is fairly simple to make. You want to startIMG_5369 by separating your egg whites from the yolks. Place the whites in a larger bowl with a pinch of salt and start beating them until stiff. You should be able to flip your bowl and the egg white “fluff” will not move. If you’ve done this right it will not budge. Once you’ve reached this point start adding in the 6 spoonfulls of sugar, one spoon at a time, beating it as you go along. IMG_5370

Then you will pour in the yolks and beat that as well. Once the yolks are well beaten into the mixture add the flour – use the same “one spoonfull at a time” method.

The next step is to pull the pan of fruit out of the oven. Let some of the steam escape before pouring your batter over the fruit in the pan. Pop it back into the oven. All you need to do now is wait for the smell. Once your pie/cake starts to smell good it becomes very close to being finished. Keep checking it with a tooth pick and when the tooth pick comes out clean you know it has finished baking.

Pull it out of the oven and let cool before flipping over. Enjoy!
